what we produce

Extra virgin Olive Oil

 

Our olive oil production began in 2018 at which time we harvested our 300 centennial Ogliarola and Cellina di Nardo trees - traditional Puglian cultivars known for producing a harmonious and well-balanced extra virgin olive oil. These magnificent trees bear witness to our region's rich agricultural heritage. However, many of them were affected by the rapid olive decline syndrome caused by the bacterium Xylella Fastidiosa, which  affected a vast portion of the southern Salento region.

 

Faced with the challenges posed by this bacterium we adopted a proactive approach to preserving and supporting our olive-growing tradition. With deep respect for our land and its heritage, we made the decision to uproot many of the affected trees and plant new disease-resistant cultivars, such as Favolosa, and other traditional but more resistant cultivars, such as Leccino thus ensuring the prosperity of future generations of olive trees.

 

While patiently nurturing our young trees, we continue to bring you exceptional extra virgin olive oil by sourcing high-quality olives from trusted local farmers. Through close collaboration, farm visits and shared expertise, we maintain the highest standards, honoring our commitment to excellence and sustainability. Our passion for producing exceptional olive oil is stronger than ever, and we're excited about the future.

Pomegranates

 

We love pomegranates. So much so that we've planted 800 trees and 2 different varieties, Aka and Wonderful. Harvested in season and ripened to perfection, the rich flavor and nutrient density of our pomegranates are a testament to our soil cultivation practices.

Honey “millefiori”

 

The bees of the indigenous “Ligustica” breed in our 15 hives are indispensable helpers in our mission to promote sustainable agriculture. Whilst pollinating our plants, they produce honey, pure Apulian nectar, a treasure trove of flavors. We use our own equipment to extract the honey right next to the hives, with no heating and no added sugar.

"Susumaniello" Grapevines

 

Wine is also a part of the rich cultural and agricultural heritage of Puglia and with this in spirit we planted 2’000 vines of the Susumaniello variety in 2022/23. Susumaniello is a little-known red grape variety from Puglia. Grown almost exclusively in the Salento region in a small number of vineyards near Brindisi, it is one of the rarest grape varieties in the world. It is enjoying a resurgence in popularity at the beginning of the 21st century, due to a renewed interest in lesser-known Italian grape varieties.

 

Our first vintage, harvested in 2024, will be available late 2025.

Native aromatic herbs

 

The Mediterranean herbs that grow freely on our farm - laurel, oregano, sage and rosemary - are an important part of our farm's biodiversity. We offer them dried, in a variety of packaging.

Chickpeas

 

In autumn, we sow legumes such as chickpeas, fava beans and lentils, which help to improve soil health. These plants fix atmospheric nitrogen in the soil, an essential nutrient for plant growth, thus eliminating the need for synthetic fertilizers. Some of these plants and their roots become organic matter, further enriching the soil.

Chickpeas are dried and are an excellent source of vegetable protein and rich in fiber.
